Lemongrass Chicken

4 pcs chicken thigh and leg
8 shallots, finely chopped
2 lemongrass
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric powder
2 tbsp brown sugar
salt, to taste
1 tbsp sunflower oil


Remove skin from the chicken and trim off any fat.

Trim the green leaves and root end off the lemongrass stalk and strip off the outside leaves. What remains will be a greenish cream-colored core 4 to 5 inches long and 1/4 to 1/2 inch thick. Mince the core finely.

Combine all the ingredients and leave the chicken to marinate preferably overnight.

Preheat oven at 180C.Bake the chicken pieces for 30 minutes and changed the setting to broil .Brush oil and broil for another 5 minutes or until golden brown.
