Nargisi Kofta
A rich minceball curry with the minceballs stuffed with boiled eggs


For the koftas:

4 hard-boiled eggs

500 g minced beef
1/2 tsp grounded coriander
1/2 tsp grounded fennel
2 tsp chopped garlic
2 tsp finely minced ginger
2 tsp chopped fresh corander
1 egg
salt and pepper

Mix all the ingredients, except the boiled eggs.
Divide the mixture into 4 and stuffed each portion with boiled eggs and shape into balls.


For the gravy:

2 bay leaves
1 cinnamon stick
2 cloves
3 cardamons
1 tsp minced garlic
1 tsp finely chopped ginger
2 onions, finely chopped
1/2 tsp mace
1 tsp chillie powder
1/4 saffron strand
1 cup tomato, skinned and chopped
1 tbsp cream
1/4 cup raisins
1 tsp garam masala
salt


Heat oil in a pan.
Add bay leaves, cloves, cardamons and cinnamon stick and saute over medium heat for about 30 seconds.
Add the onions, ginger and garlic and saute for another 30 seconds.
Add the red chillie powder, saffron,mace, raisins, chopped tomatoes, cream and a little water, if necessary. Season with salt.
Simmer over medium heat until the oil separates from the tomato gravy.
Now add the koftas very carefully into the gravy. Add 1 cup of hot water and cover the pan and simmer for about 10 minutes.
Sprinkle garam masala before serving.
