Kerutub Ayam
recipe taken from Ismail Ahmad's Malay Heritage Cuisine

6 pcs chicken thighs
3 cloves
1 cinnamon stick
3 cardamons
Tamarind extract
1 cup coconut milk
salt and sugar, to taste

Finely blended spices;
2 tbsp sambal oelek ( or dried chillie paste)
2 tbsp kerisek
10 shallots
3 cloves garlic
1 small knob of ginger and galangal
1 tbsp shrimp paste
1 tbsp meat curry powder
3 tbsp Korma curry powder

Heat oil in a wok. Fry cloves, cardamons and cinnamon until fragrant.

Add in the finely blended ingredients and fry until aromatic.

Add in coconut milk and chicken pieces. Let it simmer for about 10 minutes. Add tamarind extract and season with salt and sugar. Leave it to simmer further until the gravy thickened and the chicken pieces are cooked.
