Almond Semolina Cake

Almond Semolina Cake

6 eggs, separated
10 oz sugar
9 oz semolina
3 oz ground almond
3 oz flour
2 tsp vanilla essence
lemon zest from 1 lemon
10 oz butter

Mix semolina with 4 oz of softened butter.

In a clean bowl, whip egg whites until stiff.

In a bigger bowl, beat sugar and the rest of butter until pale and fluffy. Add in egg yolks one at a time.
Add in flour, almonds and the semolina mixture. Add in vanilla and lemon zest.

Fold in the egg whites into the cream mixture.

Bake in a 170C oven for 45 minutes.
