Curried Roast Chicken


Curried Roast Chicken

Recipe taken from Wan Ismail's Simply Sedap

6 pcs chicken thigh
1 tsp salt
1 tsp turmeric
1 tsp ground white pepper
1 tbsp oil
1 1/2 cup coconut milk
a handful of basil leaves
1 tbsp tamarind juice
brown sugar, to taste
fresh pineapple, cubed

Spice paste;
5 red chillies
8 shallots
2 garlic cloves
1 small knob galangal

Rub the chicken with salt, turmeric and pepper and grill in a 180C oven for about 25 minutes.

In a pan, heat oil and fry the finely grounded spice paste until fragrant. Add the coconut milk, tamarind juice, sugar, salt and basil. Simmer for about 15 minutes.

Add chicken pieces into the pan making sure the chicken is fully coated in the gravy.

Transfer pan into the oven and bake for a further 30 minutes.

Garnish with pineapple pieces.
