Water Chestnut Rubies with Coconut Sauce

1 cup diced water chestnut
red food coloring
1/2 cup tapioca starch
5 cups water


1/2 cup sugar
3/4 cup water
3/4 cup thick coconut milk
a pinch of salt


Slice each water chestnut into 6 equally sized pieces.
Set water chestnut pieces into a bowl and drop the red food coloring and mix well.

Put tapioca flour in a big bowl. Drop the chestnuts in and shake the bowl around to coat the water chestnuts with the tapioca flour. Scoop the water chestnuts into a strainer to get rid of the excess flour.

Boil a pot of water. When boiling, dump the flour coated ruby-like chestnut morsels in. The cooked rubies will start to surface and float. Scoop them up in a strainer and place them into ice water.


To make the accompanying coconut sauce; combine the sugar and water in a pot, boil over medium heat until it becomes syrupy. Add the coconut milk and a little salt and stir to combine. Remove from the heat.

To serve, mix water chestnut rubies with sufficient amount of coconut sauce and some crushed ice.
