Chocolate Chestnut Cake
from Nigella Lawson's Feast

225g dark chocolate, broken into small pieces and melted
6 eggs, separated
a pinch of salt
125g butter
1 x 435g can unsweetened chestnut puree
65g caster sugar

Preheat oven to 180C.

Whisk egg white with a pinch of salt until firm but not stiff.

In another bowl, beat butter and chestnut puree until combined.
Fold in melted chocolate followed by the sugar.

Stir in a big spoonful of egg white and mix thoroughly before adding the rest of the whites.

Pour into a lined tin and bake for 40 minutes.

Serve with a dollop of whipped cream.
