Almond Cranberry Cake


A low-fat, gluten-free and almost guilt-free dessert. I thought this cake was even better tasting the next day!!

Almond Cranberry Cake

1 cup egg whites
1 cup sugar
2 cups ground almond
grated zest of 2 lemons
3 tbsp cornstarch
1/4 tsp salt
1 cup dried cranberries (or 2 cups any fresh small berries)

Preheat oven to 180 C. Brush a 9 1/2 inch springform pan with oil. Set aside.

Place egg whites in a bowl and whisk at a low speed until frothy. Graduallly increase the speed to high, slowly adding the sugar, and whisking until stiff but not dry.

Add in the ground almond, lemon zest, cornstarch and salt and mix until blended.

Spoon mixture into prepared pan and sprinkle the berries on top.

Bake for about 35-40 minutes.
