Lamb Stew


Lamb Stew

2 tbsp olive oil
1 onion, peeled and chopped
1 garlic clove, finely chopped
1 sachet roast masala mix spice
1 potato, peeled and chopped
½ cup currants
4 cups beef stock
1 tbsp tomato purée
450g lamb steaks, diced

Heat 1 tbsp of the olive oil in a medium saucepan. Add the onion and sauté for 2 minutes. Add the potato and carrots and sauté for 3 minutes.

Pour in the stock and add the tomato purée and leave to simmer for 6-8 minutes or until the potato is cooked through.
Place the remaining oil in a fry pan and fry the lamb for 4-5 minutes. Remove the lamb from the heat and add to the base of the stew. Cook over low heat for about 30 minutes.

Remove stew from heat, ladle into a shallow dish and serve.
