Creme Caramel

4 eggs
2 cups skimmed milk
1 cup sugar
2 tsp vanilla extract
salt

For the caramel:
1 cup sugar


In a saucepan, bring the milk to just below a boil over medium-high heat.
Meanwhile, mix together the eggs, sugar, and vanilla in a large mixing bowl.
Whisk in the hot milk a little at a time, to prevent excess bubbles. Strain though a sieve.

Place 6 ramekins in a baking dish. Pour custard into each caramel-coated ramekin. Carefully pour boiling water into the baking dish until 2/3 of the way up the sides of the ramekins.

Bake for about 35 minutes, or until the custards are almost fully set. Remove from the oven.

Refrigerate until well chilled.
