Baked Chicken in Spicy Maple Sauce

 
 

Baked Chicken in Spicy Maple Sauce

6 chicken drumsticks, skinned
1 tablespoon olive oil
juice from 1/2 lemon
salt and pepper

For the sauce:
2 tablespoons maple syrup
1/2 cup water
4 tablespoons soy sauce
2 tablespoons red wine vinegar
1 tablespoon tomato purée
1 teaspoon ground ginger
1 teaspoon mustard powder
2 cloves garlic, peeled and crushed
2 teaspoons Tabasco sauce


Mix the olive oil with the lemon juice, then place the chicken joints in a bowl. Season with a little salt and freshly milled black pepper, then brush the chicken pieces with the oil and lemon juice. You can do this well in advance and leave in the fridge overnight.

When you're ready to cook the chicken, pre-heat the oven to 180 C.

Combine all the sauce ingredients in a bowl and, using a small whisk, blend everything thoroughly.

Rub the sauce all over the chicken, giving everything a good coating.

Bake the chicken in the oven for about 40 minutes.
You will need to baste it twice during this time.

Serve the chicken with the sauce spooned over.
