Sea Bass in Citrus Soy

In honour of the Olympic games in Beijing.......

Sea Bass in Citrus Soy

6 pieces sea bass fillet

juice from 1 orange
1/4 cup light soy sauce
2 tbsp malt vinegar
1 tsp cayenne pepper
1 tbsp chopped ginger
1 tbsp sesame oil
salt and sugar

Combine ingredients for the marinade in a baking dish. Add fish; turn to coat. Chill 2 hours, turning fish occasionally.

Place fish fillets sans marinade on a grill. Grill fish until opaque in center, about 4 minutes per side. Transfer fish to plates.

Boil marinade until reduced enough to coat spoon, about 6 minutes. To serve, spoon marinade over fish.
