Oeufs en Cocotte

For each ramekin, you will need

2 eggs
Smoked salmon, sliced
a few strands of saffron
salt and pepper
olive oil, to coat the ramekin

First boil some water.
Grease ramekin with a little oil.
Add sliced salmon at the bottom of each dish.
Break an egg into each ramekin, season, then sprinkle a few strands of saffron.
Place the dishes in the baking tin, then pop it on the centre shelf of the oven and pour enough boiling water into the tin to come halfway up the sides of the dishes. Now let the eggs bake for 15 minutes if you like them soft and runny, or 18 minutes if you like them more set.
