Mary Berry's Fresh Blueberry Muffins

Not able to sleep...

Woke up around 2 in the morning and started to mop the house, scrubbed the kitchen work-surface and gave the toilets and bathrooms a chemically-enhanced makeover.

Having finished all that, I started to prepare for breakfast at around 4 a.m. I had to look for a recipe that makes the least amount of machineries, gadgets and singing, or the neighbours will be on my case , or is it the other way round??!!

This amazing little uglies have very little butter and sugar.

Fresh Blueberry Muffins
(aka Boil-at-the-Buttock-of-the-Baboon Muffin)

250g flour
1 tsp baking powder
1/2 tsp baking soda
50g butter
3 oz sugar
6 oz fresh blueberries
grated rind of 1 lemon
2 eggs
250 ml milk

Sift flour, baking powder and baking soda into a large bowl.
Rub in the butter until the mixture resembles fine breadcrumbs. Stir in blueberries, sugar and grated lemon rind.
In another container, mix together milk and eggs. Then pour the mixture into the dry ingredients.
The mixture should have a lumpy consistency.
Spoon into the prepared tins or casings.
Bake for about 20 minutes in a 190C oven.
