3 salmon fillets
3/4 cup finely chopped walnut
3/4 cup dried cranberries, chopped
3 tbs extra-virgin olive oil
2 tbs chopped fresh thyme
2 tsp grated lemon peel
salt and pepper
Preheat oven to 180.
Oil baking sheet. Sprinkle salmon with salt and pepper. Place skin side down on sheet.
Combine walnut, cranberries, 2 tablespoons olive oil, thyme, and lemon peel in a bowl. Season with salt and pepper.
Spoon onto salmon, dividing equally. Press to adhere.
Drizzle with remaining oil. Bake until topping is golden and salmon is just opaque in center, about 20 minutes.
Serve with your choice of salad.
