Pineapple Carrot Cake

This super-moist and luscious cake was made by Puan Fauziah Hanim during the lunch we had at her residence. Thanks so much for sharing......



Pineapple Carrot Cake

2 cups flour
11/2 tsp baking powder
11/2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1 cup walnuts
1 cup pine nuts
1 cup oil
1 cup sugar
1/2 cup butter - melted
3 eggs
2 Tbsp. maple syrup or honey
2 cup chopped fresh pineapple
3 cups shredded carrots

Frosting:
8 oz cream cheese
2 cups powdered sugar

Combine flour, baking powder, baking soda, cinnamon, nutmeg, walnuts, and pine nuts and mix well.
Combine oil, sugar, butter, eggs, maple syrup or honey, pineapple, and carrots and mix well. Add to the dry mixture. Mix well.
Pour batter into cake pans.
Bake for 40 - 45 minutes at 180 C.


To make the frosting:
Beat the cream cheese and powdered sugar until fluffy.
Spread on top of cool cake.
