2 cups flour
2/3 tsp baking powder
1/4 tsp baking soda
1/2 cup semolina
2 tsp sugar
salt, to taste
3/4 cup water
5 tsp yoghurt
4 tsp ghee
2 1/2 cups oil, for frying
Combine all ingredients, and knead to a fine, soft dough.
Cover the bowl and set aside for 20 minutes.
Divide into 20 equal balls, cover and set aside.
Roll out each ball and pull it gently to make and oval shape.
Heat the oil in a wok to a smoking point and deep fry each bhatura until it is golden on both sides.
