Chicken Vindaloo

1 kg chicken pieces
2 large onions
4 tbsp ghee
6 garlic cloves
fresh root ginger
2 tsp cumin seeds
2 tsp coriander seeds
2 tsp fenugreek seeds
2 tsp black peppercorn
1 tsp turmeric powder
sugar
salt
vinegar
8 green cardamoms
1 cinnamon stick
4 dried chillies
2 tbsp tomato puree


Peel and chop the onions. Fry onions in oil until golden brown and drain on kitchen paper.

Put fried onions, ginger, garlic, cumin, coriander, fenugreek, peppercorns, turmeric, sugar, salt and vinegar in a food processor and process until smooth.

In a large saucepan, heat some oil, cook the chicken in batches, until sealed on all sides. Add the paste, along with cardamoms, cinnamons and chillies. Stir so that the chicken is coated on all side.

Add tomato puree and water. Bring to boil, then lower the heat, cover and simmer gently for about 45 minutes.
