Marinade minced garlic
cayenne pepper
brown sugar
dark soy sauce
light soy sauce
salt
Baby spinach
Combine all the ingredients for the marinade.
Marinade the fish for about 20 minutes. Place it under the grill, and cook salmon until golden brown, about 3 minutes per side.
In a pot, heat oil over medium high heat. Add spinach and toss until wilted but still bright green. Season to taste with salt and pepper.
These past two days, the weather has been glorious!
Of late, I felt like a permanent fixture at the local garden centre much like those pesky garden gnomes. I have to keep myself busy as the other half is away on business and what better than to get myself all mucky in the garden.....
