In search of a great carrot cake recipe....and this is not it.....
don't get me wrong, not that it's a bad recipe, it's just that I have tested better carrot cake, therefore, my quest for the perfect carrot cake recipe continues....
1 1/2 cup vegetable oil
2 cup sugar
1 tsp salt
1 tsp cinnamon
2 cups flour
2 tsp baking soda
150g grated carrots
1 cup chopped walnuts
Preheat oven to 180 C.
Blend oil and sugar. Add eggs, beating well after each addition.
In another bowl, sift together flour, salt, cinnamon and baking soda. Add to the egg mixture and stir completely.
Fold in carrots and walnuts.
Pour batter in the baking pan and bake for 75 minutes, or until skewer comes out clean when inserted into the cake.
