Nectarine Chutney


Nectarines - Peaches' mutant cousin
Nectarines are essentially the same fruit as Peaches, the primary difference is that nectarines are smooth-skinned and peaches are fuzzy. The smooth-skin characteristic that distinguishes nectarines is a minor genetic variation. It is even possible that a peach tree may suddenly produce a branch that bears nectarines, and vice versa.

To speed up the ripening process, place nectarines in a paper bag and store loosely at room temperature. Once ripe, nectarines will keep in the refrigerator for a week.

· A good source of vitamin C

Something on the side....Best eaten with grilled chicken!!

Nectarine Chutney

2 nectarines, cut into 1 inch pieces
2 tbsp tomato ketchup
1 small garlic clove, minced
1 tbsp cider vinegar
2 tbsp light brown sugar
1/2 tsp curry powder

Simmer all ingredients in a heavy saucepan, stirring occasionally, until slightly thickened but still saucy.
