Tomato Rice with Lemon Roasted Chicken

 
 
 
 
I finally finished my "homework"....... and as a reward, I made the family my mom's famous Nasi Tomato ( it was famous among my brothers and meself, that is ).....

I do not have the exact measurements of the ingredients....it's one of those I would refer to as "chuck-and-pray" recipe....



Tomato Rice

3 cups basmathi rice (soaked in water for about 1/2 hour and drained)
2 cups canned stewed tomatoes (my mom uses Cream of Tomato Soup...and it has to be Heinz, It supposed to taste better than the other brands...she swears by it)
1/2 cup sweetened condensed milk (no kidding!!)
2 cups water
large onions
garlic
fresh coriander leaves
cinnamon bark
cardamom
cloves
salt and sugar


In a food processor, blend onions and garlic.

In a large pot, melt some butter and saute the blended ingredients along with cinammon and cloves. Once the onions turned translucent, stir in the rice to get a good coating of butter.

Then add the rest of the other ingredients and leave it to simmer over medium heat.



Roasted Lemon Chicken

3 pcs chicken thighs
turmeric powder
balsamic vinegar
lemon juice
olive oil
red pepper
salt
sugar
pepper

Toss everything together in a roasting pan and bake for about 45 minutes in a 180 C oven...need I say more.....
