Veal Korma

I'm back with my art cronies, after a semester hiatus....

For the last 4 months, I have not produced a single artwork....and for the first project we started with something akin to what we were feeling at this moment in time....grey, wet, cold....depressing....

Enough of that cold dankness of winter... something spicy to uplift any downtrodden spirit...

Veal Korma

500g veal , cubed
1 large onion, finely chopped
4 tsp garam masala
1 tbsp chillie powder
1 small piece fresh ginger, grated
1 cup single cream
lemon juice
salt and sugar
almond slivered, toasted
fried shallots

Cashew masala

2 tbsp vegetable oil
1 tsp cumin seeds
1 tsp cardamom seeds
3 tsp poppy seeds
1 tsp black peppercorn
2 cloves garlic
1 pcs grated ginger
1/2 cup cashewnuts
1/3 cup boiling hot water

Heat oil in a heavy-based frying pan, add spices and fry over medium heat for 5-10 minutes.

Add garlic and ginger and cook for 2 minutes more, and leave to cool.

Put spice mixture in a food processor, add cashew nuts and water and grind to a smooth paste.

Cover tightly and keep in a cool place for up to 1 week.

To make the Veal Korma

Heat oil in a pan, add veal and fry until browned all over. Add onion and cook for about 5 minutes.

Stir in cashew nut masala, chillies and ginger.

Add water and bring to boil. Let it reduced a little.

Add in the cream, lemon juice and seasonings.

Garnish with toasted almond and fried shallots.

Btw, dunno why, but, I can never leave any comment on your site ...same problem I have with Zaza's too.... after a few attempts, my pc became a bit wonky (macam its mistress-la)... I guess it's a case of "look only and zip it"...frust betoi!!
Just to add... I adore Level 42....I'm getting flashbacks, minus 20kg ago... good old days...
