Black-Bottom Cupcakes


Black-Bottom Cupcakes


8 oz cream cheese
1/3 cup sugar
1 egg

The base:

1 1/2 cups flour
1 cup light brown sugar
5 tbsp cocoa powder
1 tsp baking soda
1/4 tsp salt
1 cup water
1/3 cup vegetable oil
1 tbsp vinegar
1 tsp vanilla extract

Pre heat oven to 175 C.

First, make the topping by beating together the cream cheese, sugar and egg until smooth.

In a medium bowl sift together the flour, brown sugar, cocoa powder, baking soda, and salt. In a separate bowl, mix together the water, oil, vinegar, and vanilla.

Make a well in the center of the dry ingredients and stir in the wet ingredients, stirring until just smooth.

Divide the batter among the muffin cups. Spoon a few tablespoons of the cream cheese mixture into the center of each cupcake, dividing the filling evenly.

Bake for 25 minutes, or until the tops are slightly golden brown and cupcakes feel springy when gently pressed. Let cool, then carefully remove from the muffin tin.

I love this cuppies...they were soft and moist. The only change I would make is to bake them in paper cups instead of baking them in the muffin moulds, since they break quite easily.
