Prawn in Spicy Coconut Gravy

 
I got this recipe from Chef Ismail over the phone.....
Note to self....must bring pen and paper, recording paraphernalia, etc. when meeting Chef. He keeps dropping recipes like chicken with diarrhea....


Prawn in Spicy Coconut Gravy
Masak Lemak Udang

200 g tiger prawns
250 g french beans
5 small thai chillies
1 small knob fresh turmeric
1 lemon grass
3 pcs assam gelugor
1 cup thin coconut milk
1 cup coconut cream

Using mortar and pestle, pound chillies and turmeric into an unrecognisable paste.

In a pot, over a medium heat, add in pounded ingredients with a little water. Simmer until water is greatly reduced.

Add in thin coconut milk, lemon grass, assam and let it simmer gently over low heat. This process would probably take about 8-10 minutes.

Add french beans and adjust seasonings.

Lastly, add in prawns and coconut cream.
