Chicken in Spicy Turmeric Gravy

 
 
As I was growing up, more often than not we will be having this curry as part of our meal. In our household, this dish was also known as Ayam Masak Abang, as it was my brother's favourite dish. Unlike him, I do not and will not have a dish named after meself...perhaps a whole feast....not a dish....I like to to things in a big way!!!!



Chicken in Spicy Turmeric Gravy
Ayam Masak Kunyit

6 pcs chicken thighs, skinned
8 shallots
2 garlic cloves
2 tbsp sambal oelek
1 small knob fresh ginger
1 small knob fresh turmeric
2 lemon grass
3 pcs assam gelugor
1 1/2 cup coconut milk


In a food processor, blend together shallots, garlic, ginger, turmeric and sambal oelek.

Heat a little oil in a wok, add in the blended ingredients and simmer for about 10 minutes. Add water, if necessary.

Add in lemon grass and assam gelugor.

Add in chicken and coconut milk. Reduce the heat and cook for a further 25 minutes, or until the chicken pieces are cook and the gravy has reached the required consistency.

Add salt and sugar, adjust to taste.

Eena -- sambal oelek macam chillie boh tapi menggunakan chili hidup dan ditambah dengan cuka dan garam. Banyak dijual di sini dan mudah nak pakai...buka botol saja....

Ina -- tak....masakan Sumatera ka...Jawa ka....Jepun ka....semua kita makan...masakan ni was introduced to us when we were staying in Seremban...

Lee Lin -- bila time gaduh...kita nak masak abang kita terus.....

RinnChan -- so far, I don't have any food associated to my daughter or husband....I hardly cook anything more than twice....
