Vegetarian Dhal Curry
2 cups dhal, I'm using the tiny red split lentils also known as masoor dhal
2 potatoes, cubed
2 tomatoes, chopped
1 cup frozen peas
1 cup chopped carrots
1 garlic, minced
1 small onion, chopped
1 small knob of ginger, sliced
1 tbsp curry powder
1 tsp turmeric powder
salt, to taste
In a pot, boil the lentils in some water.
Once boiling, reduce the heat and let it come back to a gentle simmer and cook for 5 minutes. After that add the diced potato and carrot and continue cooking until the lentils have turned mushy.
Add turmeric and salt and frozen peas, then bring it all to the boil.
While that's cooking, heat up oil in another pan and fry the onion, garlic and ginger in it (over a fairly high heat) until the onion has browned – then lower the heat and stir in the curry powder and chopped tomatoes.
Cook for a minute before adding the lentil mixture, then taste, season with more salt and cook gently for a further 5-10 minutes.
