Creme Caramel


A classic all time favourite dessert

Creme Caramel

6 oz sugar, for the caramel

For the custard, you will need

150 ml milk
275 ml single cream
4 large eggs
1 tsp vanilla extract

Begin by making the caramel.
Heat sugar in a saucepan until the sugar begins to melt.
Once sugar has melted into a honey-like consistency, add 2 tablespoons of water. Stir until lumps are dissolved.
Quickly pour the caramel into a serving dish.

For the custard, pour the milk and cream into the saucepan use in making of the caramel.
Place this over a gentle heat.

Break the eggs into a large bowl and whisk them.
Gently, pour the hot milk into the eggs, whisking it as you pour.
Add vanilla extract.

Pour the custard mixture through a sieve into the caramel-lined dish.
Place the dish into a roasting dish fill with hot water.

Bake in a 150 C oven for about 30 minutes.
