Cod Piccatta

3 pcs cod fillets
black pepper
1 tbsp flour

2 tbsp olive oil
3 tbsp capers, if in brine, drain and rinse before using
4 pcs anchovies (optional)
1/2 cup apple juice or chicken stock
1 tbsp lemon juice

Season the fish with salt and pepper. Lightly coat with flour.

In a skillet, heat olive oil and fry fish until lightly browned on both side. Remove from heat and plate them.

In the same skillet, using the remaining oil, fry the anchovies until they fall apart. Add in apple juice and capers. Let the sauce simmer.

Remove from heat and add in lemon juice.

You may serve this dish with butter rice and steamed carrots.
