I was looking for a traditional Italian meatballs and kofta recipes when chance upon this, instead. These meatballs are made famous by Ikea, usually served in their restaurant and also sold in the frozen section of their deli. Traditionally, these meatballs are made by combining beef and pork.
Due to dietary restrictions, I have substituted pork with lamb.
These meatballs make good appetizer and also make a fantastic party food.
1 cup bread crumbs
1 cup milk
6 tbsp butter
4 shallots, minced
2 garlic cloves, minced
1 tsp caraway seeds, toasted and ground
salt and pepper
450g ground beef
450g ground lamb
In a small bowl, combine breadcrumbs and milk and let it stand for 5 minutes.
Melt butter in a small skillet and add in minced shallots, garlic and caraway seeds. Season with salt and pepper. Saute until softened but not browned.
Put ground meat in a large bowl. Add in the sweated shallot mixture. Squeeze excess milk out of the soaked breadcrumbs and add to the meat mixture. Mix well using your hands.
Form the meat by rolling it around in moistened hands to shape it into a cue ball-sized meatballs.
Arrange meatballs in baking dish and bake in a 180 C oven for approximately 20 minutes.
To make the cream sauce
Discard most of the fat from the baking dish and return it to the heat.
Sprinkle in about 2 tbsp flour and stir with a wooden spoon to dissolve flour into the fat.
Pour in 1 cup of water of chicken broth and stir to loosen the bits from the bottom of the dish.
Simmer and stir until the liquid is reduced; season with salt and pepper.
Reduce the heat and add in 1 cup sour cream.
You may add in meatballs to the cream sauce or serve separately along with lingonberry jam on the side.
These are the changes I made to the original recipe......
I used cumin as a substitute for caraway, you may use other spices like fennel, for instance.
The original recipe calls for an egg to be added to the ingredients, and
the meatballs are fried instead of baked in the oven
Masriyah -- this meatball is very versatile....masak dalam kuah tomato and hidang dengan spaghetti or masak dengan kuah kari ala curry kofta...
Mami -- I love you too......la ni tak payah meleleh ayaq lioq kat Ikea lagi.....
Zaza -- mami pi Ikea meleleh ayaq lioq...Zaza pulak dok pi jeling orang kat Ikea.....awat la kawan-kawanku begini rupa
Caraway seeds....rupa macam jintan...use to flavour cheese and sausages. Nama melayu kurang pasti....
Mamasya -- boleh cicah dengan apa saja....my favourite is mayonnaise.
