Pineapple Tarts


Pineapple fillings:

1 ripe pineapple
sugar
cloves
cinnamon

Skin the pineapple and remove the core.
Blend chopped pineapple and sieve to drain off the juice.
In a thick bottomed pan, put liquidized pineapple, sugar, cloves and cinnamon and cook over low heat until it thickened.
Remove from heat and leave it to cool.


Pastry

250 g butter
465 g flour
salt
1 large egg
1 tsp vanilla extract
1 1/2 tbsp cold water


Beat butter until light and creamy.
Sift in flour and salt.
Add in egg, vanilla and water mixture and beat on the lowest speed for 15 seconds.


To assemble
Flatten each dough and place a cherry sized ball of jam in the centre, wrapping the jam and sealing it well with the dough.
Brush egg yolk and stick a piece of clove.
Bake in 180C oven for approximately 20 minutes.




It is best to store pineapple upside down so that the juice will be well distributed.
