Simple Chicken Briyani

4 pcs Boneless chicken breast,cut into large pieces
3 cups Basmati Rice
1/2 cup Yogurt
2 tbsp curry powder
6 whole tomatoes, skinned and chopped
2 whole green chili
3 Cloves
3Cardamoms
1 Cinnamon Sticks
2 bay leaves
Fresh Lime/lemon Juice
Salt
A few strands of Saffron (optional)
4 tbsp. Whole Milk (optional)

For garnishing:
Few whole mint leaves
Cashew Nuts
Raisins
Slivered almonds
Fried Shallots

Marinate chicken with the yogurt and salt. Let it marinate for about 3-4 hour in refrigerator.

Clean and wash the rice, drain, and set aside. Parboiled the the rice with bay leaves, cinnamon sticks, few pods of cardamoms. Start cooking rice halfway through the recipe otherwise if they get too cooled off before you mix chicken masala they won’t absorb the flavor at all. Drain off excessive water.

Heat milk and let saffron steep in it for few minutes.

Heat oil or ghee in a pot, add in green chilli and curry powder mixed with a little water and fry them until they infuse the oil with their aroma. Next add chopped tomatoes and fry them until the tomatoes disintegrated into a mushy pulp.

Add marinated chicken. Cook until it is no longer pink in the center.

In a deep baking dish or casserole layer the semi cooked rice then add a layer of chicken curry.
For next layer sprinkle chopped mint, coriander, fried onions and saffron and milk mixture (optional)
Repeat step 1
Cover with aluminum foil and cook the rice in a preheated oven for about 1 hour.
