Another day of experimenting in the kitchen....this time I was not alone....I had a kitchen buddy. My Singaporean friend, Doris came a-visiting and we baked this cake while chatting about the forthcoming Eid.

I don't normally have an audience while cooking, except when I was holding a Malaysian cooking class for the American School...Now, with them I felt like I could get away with murder....In my mind, as long as the result looked and tasted like an Asian dish....I'm alright.

Thank God the cake came out fine....or else my reputation will be amongst the gutter. Phew.....



This moist cake with a hint of lemony freshness has a very crisp crunchy crust


7-Up Cake

12 oz butter
3 cups sugar
5 eggs
3 cups flour
2 tbsp lemon extract
3/4 cup 7-Up

Cream butter and sugar together until light and fluffy.
Add eggs, one at a time, beating after each addition.
Add flour and lemon extract.
Fold in 7-Up.
Pour into a Bundt pan and bake for 1 hour.


Lemon Glaze

2/3 cup icing sugar
1 tbsp lemon juice

Mix sugar with lemon juice.
When cake is cooled, dribbled with lemon glaze
