Sizzle-less Sizzling Noodles

 
Got this recipe from RinnChan's.
It is usually served on a cast iron hot plate, along with some sliced pickled green chillies.




Sizzle-less Sizzling Noodles

2 pcs chicken breast, cut into bite-sized pieces
Chinese cabbage, cut into strips
12 pcs dried Shiitake mushrooms, immersed in hot boiling water to soften
2 cloves garlic, minced
1 knob ginger, thickly sliced
1 dried red pepper (optional)

2 tbsp oyster sauce
2 tbsp dark sweet soy sauce
2 tbsp light soy sauce
3 tsp distilled white vinegar

freshly grounded black pepper
salt and sugar, to taste

Egg noodles


For the gravy
Heat oil in a wok and over high heat and stir in garlic and ginger. Add in dried chillies and chicken meat.

Add in the oyster sauce, soy sauce and vinegar and mushrooms along with 1 cup of the mushroom water. Cook until mushroom is tender and the chicken is well cooked.

Add in cabbage and season to taste.


Place egg noodles in a serving platter and pour the gravy over the noodles.
Top with fried sunny-side up eggs.

I love to have the egg yolks still soft and wobbly, and letting them ooze into the sauce like molten lava.
