Spicy Thai Chicken

2 chicken breast, cut into strips
1 tbsp oyster sauce
1 stalk lemon grass, finely sliced
1 bunch thai basil, finely sliced
1 tbsp tom yam paste
1/4 cup water
1 tbsp mayonnaise
2 kaffir lime leaves
oil
salt and sugar

Combine chicken and oyster sauce and set aside.

In a wok, heat 2 tsp oil and saute lemon grass, basil and tom yam paste until fragrant.

Add in marinated chicken, kaffir lime leaves and water. Season with salt and sugar.
When the chicken is cooked, turn off the heat and stir in the mayonnaise.

Note: You may add finely sliced torch ginger to this recipe, if available.
