Fried Beehoon Nyonya-Style

1 packet Beehun, blanched in hot water

5 cloves garlic, finely chopped
1 tbsp preserved soya bean paste (tau cheong)
1/2 chinese cabbage, cut into strips
300g bean sprouts (taugeh)
300 g prawns, shelled and deveined
1 tbsp light soy sauce
1 tbsp thick soy sauce
1 tbsp oyster sauce
salt and sugar, to taste

In a small bowl, mix together preserved soya bean paste, light soy sauce, thick soy sauce and oyster sauce and a little water. Set aside.

Heat about 2 tbsp of cooking oil and saute garlic until fragrant. Add in the cabbages and prawns.
Add in the sauce mixture.
Season with salt and sugar.

Add the noodles and cook for about 2 minutes. Lastly, add in the bean sprouts and immediately turn off the heat.

Garnish with red chillies, omelette, fresh coriander and fried shallots.

Aliza -- this is unashamedly easy to make.....

Hajar -- kena ada artistic touches sikit, kalau tidak simple sangat. By the way, love that kuih jonkong tu....nak sangat buat tapi tak cukup ingredients pulak

Masriyah -- sekali sekala nak juga guna udang yang besar, tapi tak boleh selalu....

Mamasya -- kurang pasti pasal taucu tu, sebab mee siam pun guna taucu juga
