Vegetables with Peanut Sauce

Bean sprouts
green beans
baby cucumber

Blanch the vegetables, except for the cucumber, in boiling water for 2 minutes each.
Drain and let cool in separate dishes.






No-fuss Peanut Sauce

1 cup unsalted roasted peanuts
1 cup roasted cashewnuts
1 cup fried shallots
2 tbsp sambal oelek
2 tbsp tamarind juice
brown sugar and salt, to taste

Process the nuts and the fried shallots separately.

Heat the oil in a skillet or wok and in it stir-fry sambal oelek on moderate heat for 1 minute. Add in fried shallots and some water. Let it reduce a little.

Add tamarind juice,sugar, and salt and bring the mixture to a boil.
Add the nuts and cook for 5 minutes, or until the sauce is thickened slightly.






Lee Lin -- saya guna sambal oelek as a substitute to chili boh. Since sambal oelek has the added salt and vinegar, taste has to be adjusted accordingly.
Actually, ini kes malas...... masak style buka botol saja!!

Mamasya -- timun sini berkulit hijau tua, kurang berair and manis sikit berbanding dengan timun sana. Muna suka guna baby cucumber for salads or ulam, sebab lebih manis...

Mamafami -- I love my veggies, too.....

RinnChan -- Malaysia pun dah nak hantar astronaut....tak lama lagi Nasa nak suruh cater Malaysian food kat the space station....imagine satay floating around in zero gravity.....
Betul la....dulu masa tinggal kat Malaysia....very the manja...everything boleh beli. Sekarang semua kena buat sendiri....makin gemuk pulak tu!!
