Thai Green Curry

A couple of days ago I was tagged by Zaza on food that I love. Tough question to answer....I love 'em all.
Top on the list would be Thai food followed by Indian, Mediterranean, Malay, Middle East.....see what I mean.....
So, for the next few days, I will be sharing some of my favourite food and recipes with all of you. Thanks Zaza for the idea.


Thai Green Curry

2 pcs boneless chicken breast
2 tbsp green curry paste (see recipe below)
1 lemon grass stalk
2 pcs kaffir lime leaves
300 ml coconut milk
1 tbsp nam pla
lime juice
salt and sugar, to taste

Heat oil in a frying pan, add the curry paste and cook for about 2 minutes, stirring all the time.

Bruised the lemon grass and add to the pan along with the kaffir lime leaves and the chicken pieces. Add coconut milk and bring to the boil.

Reduce the heat to a simmer.

Flavour with nam pla and lime juice and sugar and salt, if necessary.



Homemade Thai Green Curry Paste

15 large fresh green chilies
3 large onions, sliced
9 cloves garlic
1 bunch chopped fresh basil
3 fresh lemon grass, sliced
finely grated rind of 1 lime
1 bunch chopped fresh coriander roots and all
1 tbsp roasted coriander seeds
mint leaves (optional)
vegetable oil

Put all the curry paste ingredients in the blender and process until smooth.
Season with salt and sugar.
Store in the refrigerator for up to 3 weeks.

My earliest recollection of the box neatly wrapped in either brown paper or newspaper....
I was a six year old, whenever my mom came back from her grocery shoppings....there it was amongst all the inanimates. Curiosity always gets the better of me....but, not enough for me to tear off the wrappers to see what was in it.
My question was always answered with the same answer...."It's a box of biscuits". I often wondered why she never shared any of her biscuits with me!!!
It took a good few years before I knew what it really was..... Within a lifetime,attitudes have changed....my daughter will never find a neatly wrapped "biscuit box" in my groceries....



Mamafami -- dulu and sekarang dah banyak berubah, ya!! I must say, I was pretty gullible jugak....apa yang mak cakap, kita tak banyak soal....tak macam kids sekarang. Fening kepala kita bila nak jawab soalan mereka....

Mamasya -- lepas buat food fair last weekend, banyak lebihan ingredients dalam fridge jadi dari terbuang saja, Muna pun buat paste green curry ni....kalau nak bagi tahan lama lagi, Mamasya boleh goreng bahan-bahan tu sampai masak, biarkan sejuk dan baru di simpan dalam fridge....sanang bah...
Seronoknya bila ada orang yang sudi masak dengan resepi di sini....
