Lamb Rogan Josh
a mild Kashmiri lamb dish

4 pcs lamb chops
2 tsp sugar
2 bay leaves
1 tsp cumin seeds
1 cinnamon stick
5 cloves
5 cardamoms
1 tsp ginger paste
1 large onion, chopped
1 tsp chillie powder
1 cup tomato coulis or 2 cups of fresh tomatoes, skinned,deseeded and chopped
1 cup water

Heat oil. Add sugar, cloves, bay leaves, cardamoms and cinnamon stick and saute for 2-3 minutes.

Add the lamb chops and cook over medium heat until the chops are lightly browned.

Add chopped onions and saute till caramelized.

Add in chillie powder, cumin seeds, tomatoes and ginger paste and fry till oil separates from the gravy.

Add water and cook until the meat are tender. Season well.
Cover and simmer for 10 minutes on a low fire.

Hajar -- kalau ganti dengan daging atau veal pun sedap juga. Muna tried this recipe for the 1st time today and the outcome was really good...phew!!

Cek De Sam -- sila-lah.....

Mamafami -- dulu kami pun jarang makan lamb, but, the lamb kat sini are very fresh and does not smell.

Mamasya -- Muna pun suka lamb dishes especially Moroccan, Turkish, Mediterranean , Indian.....nampak gaya semuanya Muna suka....

Yvonne -- just your luck, I just came across a tip on Cek De Sam fp...she used flour to coat the lamb meat and wash the flour off thoroughly before cooking. Another tip would be using aromatic such as bay leaves, rosemary and lots of spices. Over here we don't have that problem as I do get a supply of really fresh lamb cuts from my Turkish butcher.

Nada -- glad that I got the right person....takut nak tulis panjang, manala tau salah Nada....
