Caramelized Chicken with Green Olives and Prunes

6 chicken pieces (I'm using drumsticks)
1/2 cup green olives
1 cup pitted prunes, roughly chopped
1 clove garlic, finely chopped
2 bay leaves
Extra virgin olive oil
1/2 cup balsamic vinegar
1 tbsp dried oregano
black pepper
brown sugar

Combine oil, vinegar, oregano, olives, prunes, garlic and bay leaves. Add in chicken and season generously. Refrigerate overnight.

Preheat the oven to 180 C.

Place the chicken in a baking dish. Pour the remaining marinade over the chicken, sprinkle with brown sugar and add a little water.
Bake until the juices run clear and the meat caramelized.

Cek De Sam -- don't worry...boleh pakai vinegar biasa, cuma tambah brown sugar sikit dalam resepi ni, sebab balsamic vinegar ni manis sikit.

Mamafami -- I love prunes, too. Come to think of it, there's no food that I don't like.....
p.s. Kalau jual .... kira kati or kilo??

Kak Kamariah -- the recipe called for preserve dried prunes.....I love 'em....they make you "regular".....

Mamasya -- nowadays tak macam dolu lagi....makan sikit dah naik badan. So, terpaksalah cari alternative cara masak yang kurang berminyak......

ZakiahZ -- I prefer to use brown sugar in most of my savouries. Somehow it adds more depth to the taste.
