Creamy Fish Soup

Creamy Fish Soup
4 pcs fish fillet (Cod or Haddock)
1 large onions
4 garlic cloves
2 tbsp butter
1 cup cream
2 bay leaves
fresh thyme
white peppercorns
salt
Boil fish in 1 cup of water along with bay leaves and whole peppercorn. Add salt to flavour the stock. Turn off the flame once it started to boil. Leave it to cool.
Once cooled, strain the stock from the fish. Do not discard the stock.
In another pot, melt some butter. Add in finely diced onions, garlic, thyme and bay leaves to the pot and sauté, stirring occasionally with a wooden spoon, for about 8 minutes, until the onions and softened but not browned.
Add the stock. Turn up the heat and bring to a boil.
Add the fish fillets and cook over low heat for 5 minutes, then remove the pot from the heat and allow the soup to sit for 10 minutes.
Gently stir in the cream and taste for salt and pepper.
