Sweetcorn Apam Muffin
It's been a while since the last entry. My husband came back earlier than schedule and that kinda put all my plan(s) out of whack. No matter, we're glad to see him back home safe and sound.
As a child, I remembered buying kueh from a peddler carrying assortment of malay kueh in a wide rattan basket on top of his head. My favourite choice would always be the traditional rice flour apam eaten with slightly salted scraped coconut. Bliss.
So, when I saw RinnChan's mouth-watery entry of Apam.....I was over the moon. Most apam recipes that I've encountered often called for Eno or ovallette, the two things I won't be able to find here....but, this recipe requires neither of those.
The only adjustment I have to make to the recipe was the cooking method. As with all apam, it is normal to steam them...that was when I encountered another problem...I do not own a steamer. Being an amateur boffin cum daredevil, I resorted to baking them in a water bath.
The result is a very confused apam.....part muffin, part very moist and soft cake, part corn bread....reminisced of the Kenny Rogers' corn muffin, only better.
Sweetcorn Apam Muffin (recipe courtesy of Naz Rinn Chan)
100g cream of corn
2 tsp baking soda
1/2 tsp salt
Preheat the oven to 150C.
Cream butter and sugar until pale and creamy.
Slowly add the eggs one at a time, beating well each time.
Gently add in the corn and fold in 1/4 of the flour.
Add in milk and the fold in the rest of the flour with a large metal spoon.
Pour the mixture into prepared ramekins.
To prepare a water bath for baking, put the filled ramekins in a larger pan and add enough boiling-hot water to reach halfway up the side of the ramekins.
Bake for about 25 minutes. Leave them to cool before turning them out.
