5 pcs Cod fillets
1 cup chopped almonds
1 tbsp lemon zest
1/4 cup flour
3 tbsp fresh lemon juice
Salt
White pepper powder
Turmeric powder
olive oil
In one bowl mix together almonds and lemon zest.
In another bowl mix lemon juice, salt, pepper and turmeric powder.
Dredge fish fillets with flour, dip into lemon mixture and press into chopped almond. Press it on firmly so the fish gets well coated.
Place fish on a baking sheet sprayed with olive oil. Sprinkle a little more oil on top of the fish. Bake at 200C for about 15 minutes, turning halfway, until browned and cooked through.
Serve with Mango salsa.
For Mango salsa;
mix together some chopped mango, spring onion and sweet red pepper.
Add lime juice and pickled jalapeno.
Add salt and sugar to taste.
