Banana Walnut Muffin

 
 
 

Banana Walnut Muffin

2 eggs
3 medium size ripe bananas, mashed
1/2 cup buttermilk
1/4 cup melted butter
1 tsp vanilla
1/2 cup lightly packed brown sugar
1 cup flour
1 tbsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 cup chopped walnuts


In a large bowl, combine first six ingredients.

In another bowl, stir together the dry ingredients. Gradually add dry mixture to the first mixture, stirring just to combine. Batter should be slightly lumpy.

Spoon batter into muffin tins. Bake 30 minutes, or until a knife inserted in center of muffin comes out clean. Allow to cool five minutes before removing muffins from tin.


Note:
I baked this muffin quite early in the morning.... therefore, the brain was not fully aware what the rest of the body was up to (some may say 'tis just an excuse.....me brain never functions, anyway!!!)
The original recipe called for 1 cup of plain flour and another 1 cup of whole wheat flour, which I unintentionally omitted from my recipe.
The result was a more liquidy mixture and a soft and moist muffins which is unlike the more bready-like texture of a muffin.
So, depending on which end result you want, you may add the flour, as in the original recipe, or have it my way........
