Vietnamese Rice Paper Rolls


Releasing my inner boffin...........

Found this product in an Asian Supermarket and was dying to use it. I have absolutely no prior experience in handling or eating them, but that never stops me......

Rice paper must be softened before use. Simply immerse them, one sheet at a time, in a warm water. Soak them until they are soft, approximately 1 minute. Drain them on a clean kitchen towel before folding in the filling.

Vietnamese Rice Paper Rolls

for the filling I'm using

courgette, julienned
spring onion, finely chopped
crab stick, shredded

Fry all ingredients in a little oil. Add in salt, turmeric, sugar and pepper.
You may sprinkle in fried shallots and coarsely chopped peanut into the filling before rolling them into a burrito-like package.

For the dipping sauce, I used
Hoisin sauce with lime juice and chopped chillies added to it.
