Black Magic Chocolate Cake

 
 
 
This is the best ever lusciously moist and decadently dark chocolate cake recipe. It's one of those drop-everything-in-one-bowl kinda cake.
Since I have some fresh cherries in the fridge, I thought perhaps I can do a take on the famous Blackforest Gateau.




Chocolate Cake

2 cups sugar
1 3/4 cups flour
3/4 cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup buttermilk
1 cup strong black coffee
1/2 cup vegetable oil
1 tsp vanilla extract

Stir together sugar, flour, cocoa, baking powder and salt in a large bowl. Add eggs, buttermilk, coffee, oil and vanilla.

Beat on medium for 2 minutes. Pour batter into prepared pan.

Bake for 30 minutes on 170 C.



Stewed Cherries

Remove stones from cherries.

In a saucepan, add sugar and a little water to the pitted cherries and stew until syrup thickened.
Add lemon juice from 1/2 lemon. Leave to cool.
Add stewed cherries to whipped cream.
