Minced Beef with Crunchy Corn Bread Topping


Minced Beef with Crunchy Corn Bread Topping (adapted from

300 g minced beef
1 canned corn niblets
2 cups sliced mushrooms
1 packet taco seasoning mix
1 cup shredded cheddar cheese

3/4 cup corn meal (polenta)
1/4 cup flour
2 tbsp sugar
2 tsp baking powder
3/4 tsp salt
1 cup milk
1 large egg lightly beaten

Cook beef until no longer pink. Add in mushroom, corn and taco seasoning.
Cook over low heat for about 5 minutes. Season with salt and pepper.

Spoon mixture into a casserole dish. Top with shredded cheese.

In another bowl, combine corn meal, flour,sugar, baking powder and salt. Add in milk and egg. Stir just until blended. Spread over the meat.

Bake in a 180C oven for about 20 minutes. Serve it with some fresh mix salad.
