Noodles with Chicken and Mussels Curry

I like the combination of beehoon and egg noodles in my curry.
Blanched bean sprout
Blanched spinach
Hard boiled eggs
fried shallots
sliced chillies

Chicken and Mussels Curry

200 g chicken breast
200 g mussels ( I used frozen mussels )
4 shallots, finely diced
1 garlic clove, finely chopped
1 knob ginger
3 tbsp curry powder
250 ml coconut milk
400 ml chicken broth
tamarind juice

Heat oil in a heavy-based pot and fry shallots, garlic and ginger until fragrant.
Add in curry powder paste and continue frying for a further 5 minutes.
Add chicken broth and season with salt. Reduce the heat and let it simmer for about 10 minutes.
Add the coconut milk, tamarind juice, chicken and mussels.
