Dendeng Daging (recipe adapted from Jeni of Jenilicious)
500 g veal
2 garlic cloves
2 tbsp sambal oelek
3 stalks lemongrass
1 tbsp coriander seeds, dry roasted
2 tbsp tamarind paste
2 tbsp dark soy sauce
salt and sugar, to taste
In a food processor, blitz shallots, garlic, sambal oelek and coriander seeds until smooth.
Heat oil in a wok. Add in the processed ingredients. Fry until fragrant.
Add in veal, crushed lemongrass stalks and water or stock, if using.
Let it simmer for about 20 minutes, until the gravy has thickened.
Add in tamarind paste,dark soy sauce and season accordingly.
