marinade:
3 tbsp brown sugar
juice from 1 lime
2 tbsp fish sauce
garnishings:
1/4 cup roasted cashewnuts
coriander leaves
Fry cod in oil until golden brown. Remove skin and bones from the fish and shred the crunchy golden flesh to smaller pieces.
In another bowl, mix together the finely julienned mango, chillies and onions with the marinade.
Place the marinated ingredients on the fish. Top it with roasted cashewnuts and coriander leaves.
